harvest parfaits

These parfaits are a delicious way to celebrate the harvest (or just enjoy a creative breakfast any old time!).  Use fresh pumpkin puree if you have it, but unsweetened canned will also do the trick in a pinch.

Crunchy Topper Ingredients:

1/4 c. slow cook rolled oats

1/4 c. walnut, pecan or almond pieces

1 tsp pumpkin pie spice

1 tsp maple syrup

1 tsp toasted sesame oil

Apple filling:

4 large or 6 small apples, peeled and sliced into half moons

1 tbsp maple syrup

1 tsp pumpkin pie spice

Pumpkin filling:

1.5 c. pumpkin puree

1 tbsp pumpkin pie spice

1 tbsp + 1 tsp maple syrup

You will also need a cup or more of non-fat greek yoghurt


To prepare:

Preheat oven to 325F.  In an oven-proof dish, toss apple filling ingredients and mix well.  In medium bowl, combine pumpkin filling ingredients.

In a small bowl, combine topper ingredients, then spread on a baking tray (parchment paper makes easy cleanup).

Place apple filling dish and baking tray with topper in oven at the same time and bake for 15 minutes, checking topper after about 10 to ensure nuts are not burning.

Once cooked, repeat layer apples, pumpkin, and yoghurt in a parfait glass or mason jar (perfect for assembling the night before) and top with Crunchy Topper. Add more maple syrup if you find them too tart. Makes 6 parfaits.
