Simplest healthy breakfast for a busy family? Mason Jar Oats, sweetened naturally. Assemble the night before, let sit in the fridge overnight, grab and go in the morning. You can make a triple or quadruple family batch in a big bowl if you prefer, but we love the cute individual portions.
1/4 c. steel cut oats (you can use the large flake slow cook oats too, but you’ll lose the crunch)
1 tbsp unsweetened shredded coconut
1 tbsp raw shelled sunflower seeds
1 date, chopped
1/2 c. almond (or cow’s) milk
1/2 c. fresh or frozen strawberries, sliced
In a medium-sized mason jar, layer the oats, coconut, dates, & seeds, then pour the milk overtop, put the lid on the jar and let soak overnight. In the morning, simply add the berries on top and serve. Kids love digging down and stirring up their breakfast!
