A great way to keep variety in your lunches is to plan for leftovers by making extra the night before.  In this lunch, I heated up extra veggies that I roasted the for the previous night’s dinner, along with refrigerated pre-cooked pasta and a little jarred natural spaghetti sauce from the store to make a healthy Roasted Veggie Pasta. I added a super-quick side salad: pre-washed baby spinach & pumpkin seeds with a little healthy dressing, a banana, and a pre-made, frozen Chocolate Chip Granola Bar which will defrost by lunch (no nuts, see p. 114 of my cookbook, Real Food for Real Families for recipe.)
