Perfect Parfait Lunch

This thinking “outside the lunchbox” lunch features: Plain greek yoghurt with frozen blueberries (keeps yoghurt cool but defrosts by lunch), a side of Basic Birkenstock Granola (from my cookbook, Real Food for Real Families at p. 30, takes 5 minutes to assemble & bakes for 30 min, so make it the night before), whole grain pita triangles (cut them quickly with kitchen scissors!), a hard-boiled egg and raw veggies (local cukes and carrots).  Kids love to make their own parfaits at lunchtime!
