This very easy family-friendly crockpot stew is my last kick at a comforting winter recipe. I’m optimistic Spring will soon be upon us! (Am I crazy?)

  1. 1 c chopped onion
  2. 1 c chopped carrots
  3. 1 c chopped celery
  4. 4 c low-sodium veggie broth
  5. 2.5 c water
  6. 2 c green lentils (picked over and rinsed)?1/4 c tomato paste (did you know you can freeze leftover paste?)
  7. 1 can (28 oz/796 mL) diced tomatoes?2 tsp ground cumin
  8. 1 tsp ground coriander
  9. 1 tsp curry powder
  10. 3/4 tsp sea salt
  11. 1/4 tsp red pepper flakes
  12. 1 c spinach, packed then chopped
  13. 1/2 c fresh parsley, packed then chopped
  1. Place onion, carrots, celery, broth, water, lentils, tomato paste, tomatoes, cumin, coriander, curry, salt and red pepper flakes in crockpot and stir to combine.
  2. Cook on low for 8 hours.
  3. After 7.5 hours of cooking time, add spinach and parsley and stir, letting it cook another 20-30 minutes or until spinach wilted.
  4. Makes 9.5 cups.

  1. Hey! This looks so good, unfortunately I can not eat cumin, coriander or most curry powders. I know this is a long shot but can you recommend any other spices that might go well with this dish? Thanks in advance! 

    1. This is a long shot answer but you could try basil, oregano, chili flakes, garlic and then add the fresh parsley at the end as the recipe calls for. I have no idea how that would taste but those flavours pair well together 🙂

    1. I would not substitute red lentils, no. They lose their shape when cooked so it will be very mushy. They also don’t have the nice peppery flavour of green lentils which works well with this recipe. You could use brown or black lentils though if you had those.
