sweet coconut veggie curry (crockpot)

Simple & sweet with a touch of heat, this is a family-friendly crockpot recipe you’ll love to come home to. Serve over brown basmati rice for a comforting, nutritious dinner.

  1. 1 c chopped onion
  2. 3 c diced sweet potato
  3. 3 medium garlic cloves, crushed
  4. 2 medium carrots, sliced
  5. 2 c chopped green cabbage
  6. 3 c low-sodium veggie broth
  7. 1 can (28oz) diced tomatoes
  8. 1-2 tsp curry, depending on strength of curry and how hot you like it!*
  9. 2 tsp sea salt
  10. 1 tsp ground cumin
  11. 1/2 tsp pepper
  12. 1/2 tsp ground ginger
  13. 1-14 oz can coconut milk
  14. 2 c packed spinach, chopped
  15. 1/2 c. packed fresh cilantro, finely chopped
  16. 1tbsp honey (optional, omit if avoiding sugars)
  17. raw cashews, chopped, for garnish (optional)
  18. *Start with 1 tsp, cook fully, then after adding coconut milk, add more curry to taste if needed.
  1. Combine onion, sweet potato, garlic, carrots, cabbage, broth, tomatoes, curry, salt, cumin, pepper and ginger in crockpot and cook on high, 4 hours, or low for 8 hours.
  2. Once cooked, add coconut, spinach, cilantro and honey and continue cooking until spinach wilted, about 10 minutes.
  3. Serve over brown rice and garnish with chopped cashews, if using.
