Black Bean & Quinoa Freezer Burritos

These yummy burritos are perfect for busy nights when you need a grab-and-go dinner or your kids have to eat between activities. They’re also lunchbox-friendly, and can be eaten warmed or cold. Make a big batch, wrap and freeze, then defrost and reheat in the oven or microwave for instant healthy fast food when you need it! Experiment with other filling ingredients – grated carrots, cooked spinach, salsa, organic corn, or avocado would all work! Pre-cook your quinoa and sweet potato for faster assembly.

Ingredients
  1. 1 tbsp olive oil
  2. 2/3 c chopped onion
  3. 2 cloves garlic, crushed
  4. 2 c cooked quinoa
  5. 1 - 14 oz can black beans, rinsed & drained
  6. 2 tsp cumin
  7. 3/4 tsp chili powder
  8. 1/2 tsp sea salt
  9. 1/2 c packed fresh cilantro, chopped
  10. 10 small or 6-8 large wholegrain tortillas/wraps (you can try my Wholly Homemade Tortillas or use store-bought)
  11. 1 medium sweet potato, cooked until soft*
  12. 1 c grated white cheddar or other cheese
  13. 1/3 c or so of plain yoghurt (greek or otherwise)
  14. *to cook sweet potato, pierce skin and microwave for 5-7 minutes, turning once, or roast in 400F oven with skin on for about 40 minutes
Instructions
  1. In a large pan, heat the oil over medium heat. Add the onions and garlic and cook, stirring, until onions softened and translucent. Add quinoa, beans, cumin, chili, salt and cilantro and stir until well combined. Remove pan from heat.
  2. Lay out your tortillas on your prep surface, and spread cooked sweet potato on the centre of each, dividing it equally between tortillas (if using 10 small tortillas this will be about 1 heaping tbsp per tortilla - remember to leave a margin of at least an inch around the potato and other filings for ease of wrapping). Then divide quinoa mixture evenly between tortillas (if using 10 small tortillas, this will be about 1/3 c of the quinoa mixture on each tortilla) and top each with equally-divided cheese and a dollop of yoghurt.
  3. Wrap each tortilla “burrito-style”. To freeze, wrap burritos individually in foil and place in freezer-proof bag or container. To reheat, remove foil, thaw in fridge or microwave and heat in oven or microwave.
