Veggie Chili over Quinoa

During the month of September, I traditionally post my photos and descriptions of what’s REALLY in my own kids’ real lunches. Today’s lunch contained raw carrots, sugar peas and baby tomatoes, a plum, a hard boiled egg with a little sea salt (peeled for easy access), and veggie chili over pre-cooked quinoa with a little grated cheese (chili was made a couple days ago and frozen (it’s the Cowpoke Chili from my first cookbook, Real Food for Real Families, p. 71). Since it’s the first day I’m also including their favourite healthier treat, a Grizzly Paw (also from my cookbook, p. 124).
