Caramelized Onion & Goat Cheese Frittata

OK people. Goat cheese and caramelized onions — need I say more? Look no further, this is the cold winter night, comforting frittata of your dreams. As an added bonus, it’s so easy your kids can assemble it, just make sure you’ve got some caramelized onions on hand – try making my Dead-Easy Crockpot Caramelized Onions and freezing them, then you can make this any old time the craving hits you.

Caramelized Onion & Goat Cheese Frittata

Ingredients
  1. 1 tbsp olive oil
  2. 4 c sliced or cubed pre-cooked potato
  3. 6 eggs
  4. 1/2 c pure liquid egg whites
  5. 2/3 c light coconut milk
  6. 1 c caramelized onions, chopped (see my easy crockpot recipe: http://www.simple-balance.ca/2015/09/crockpot-caramelized-onions-dead-easy/)
  7. 1/2 tsp dried thyme
  8. 1/2 tsp sea salt
  9. 1/4 tsp pepper
  10. 1/4 c goat cheese
Instructions
  1. In a cast iron or other oven-proof skillet, heat olive oil over medium heat, then add sliced potatoes and cook for 5-7 minutes or until golden.
  2. Press potatoes into bottom of pan to form a "crust", then remove pan from heat.
  3. Whisk together eggs, egg whites, coconut milk, onions, thyme, salt and pepper and pour mixture into pan over potato crust.
  4. Crumble the goat cheese over the top.
  5. Bake in oven at 325F for 35-45 minutes or until top is set.
  6. Serves 6-8.
Notes
  1. You'll want to pre-cook your potatoes in the oven or microwave, and make sure you've got some caramelized onions in the freezer. Try my easy recipe: http://www.simple-balance.ca/2015/09/crockpot-caramelized-onions-dead-easy/
