Caramelized Onion Hummus

I. Can’t. Stop. Since discovering how easy caramelized onions are to make in the crockpot, I’ve been putting those things in everything. Case in point: This Caramelized Onion Hummus. Oh. My. Word. Make your onions tonight, have this with your weekend wine. 🙂

Caramelized Onion Hummus
  1. 1.5 cup cooked chickpeas (or one 14 oz can, rinsed and drained)
  2. 1 tbsp tahini
  3. juice of one lemon
  4. 1-2 cloves of garlic (start with one, taste at end, add another if you like)
  5. 1 tsp sea salt
  6. 1 c caramelized onions (see easy recipe on my blog:
  7. 1 tbsp water
  8. 1 tbsp olive oil
  1. Add chickpeas, tahini, lemon juice, garlic, salt, onions, and water to a food processor and process until smooth.
  2. Add oil last, blending it in slowly as the hummus is processing (Your food processor should have a tiny hole somewhere on the lid that allows for this slow adding of oil or other liquid while blending).
  1. You'll want to have the Crockpot Caramelized Onions made in advance so you can make this any time the craving hits - I make them and then freeze them in 1/2 c portions for use in this recipe, frittatas, pizzas, etc. You can find the easy onion recipe here:
