The morning of your next holiday get together, throw a couple of bananas in the freezer, set a cup of almonds out to soak and then get the bourbon out! This is a much healthier dairy and refined-sugar free version of the traditional holiday eggnog that is laden in sugar and fat. And it’s really delicious. Creamy Almond Nog
  1. 1 c. raw almonds
  2. 3 c. of water (or only 2 c. for an even creamier nog)
  3. 2 frozen bananas (cut into chunks before freezing)
  4. 1 tsp vanilla extract
  5. 3/4 tsp cinnamon
  6. 1/2 tsp nutmeg
  7. 1/2 tsp ground ginger
  1. Place almonds in a bowl and cover with water. Let soak 4 hours minimum, then drain.
  2. Place soaked almonds and water in a blender and puree until smooth. Pour the mixture through a nut milk bag, cheesecloth or the sock portion of a clean nylon stocking resting in a mesh sieve over a bowl, straining the blended mixture to remove the pulp. You will likely have to press or squeeze the mixture to extract all the liquid. Discard the pulp and return the strained liquid to the blender.
  3. Add the frozen bananas, vanilla, cinnamon, nutmeg and ginger to the blender and blend until smooth and frothy. Serve immediately (or refrigerate and re-blend just before serving), adding a little bourbon or rum if you like.
