Whip these no-bake goodies up in 5 minutes for a last-minute holiday dessert or hostess gift. Packed with protein and healthy fat, these naturally-sweetened truffles are a perfectly sweet treat!
10 medjool dates, pitted
1/2 c. raw sunflower seeds
1/2 c. raw walnut halves or pieces
2 tbsp chia seeds
2 tbsp maple syrup
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/8 tsp cloves
1/4-1.3 c. unsweetened shredded coconut (for rolling)
Place sunflower seeds and walnuts in food processor and blend until ground to a meal. Transfer to a bowl and set aside. Place dates in food processor and blend until they form a slightly chunky paste. Add ground sunflower seeds & walnuts, chia, maple syrup, vanilla, cinnamon, ginger, nutmeg and cloves and process until well-combined (a ball of dough will often come together in your food processor, which is a good sign it’s well-mixed).
Spread the shredded coconut evenly over a large plate. Using hands, roll dough into balls using about one heaping teaspoon per ball, then roll each ball in coconut to coat. Freeze for at least 2 hours before eating, and store leftovers in freezer.
Makes about 25 balls.
