I can’t believe it’s not butter chicken

If you love butter chicken and love to eat healthy and find those two things to be generally entirely contradictory,  look no further. This is your recipe.

This simple, creamy recipe tastes way more decadent & complicated than it is. Assemble in five minutes, throw it in the crockpot and walk away. A few hours later you’ve got a delicious vegetarian main course to serve over rice. 

I Can't Believe It's Not Butter Chicken
  1. 1-454g package of tofu, cubed into 1/2” cubes
  2. 1/2 c dried red lentils, picked over and rinsed
  3. 1 onion, diced
  4. 4 cloves of garlic, crushed
  5. 1-14 oz can light coconut milk
  6. 1-156 ml can tomato paste
  7. 1/2 c water
  8. 2 tsp curry powder
  9. 2 tsp garam masala or indian masala
  10. 1/2 tsp ground turmeric
  11. 1/4 tsp ground ginger
  12. 1/2 tsp sea salt
  13. 2 tsp maple syrup
  14. 1/2 c plain greek yoghurt
  15. fresh cilantro, to garnish (optional)
  1. Place tofu cubes, lentils, onion and garlic in crockpot.
  2. In a mixing bowl, whisk together coconut milk, tomato paste, water, curry, garam masala, turmeric, ginger, salt, and maple syrup, then pour mixture over the tofu and lentil mixture. Stir to combine well.
  3. Cook on high for 3.5-4 hours or until lentils are soft, stirring in the yoghurt in the last 15 minutes of cooking time. (This recipe doesn’t work well cooked on low for 8 hours, it gets too dry, I’d stick with high for 3.5-4 hours!)
  4. Serve over brown basmati or jasmine rice and garnish with chopped fresh cilantro.
  5. Serves 5.
