After School Applesauce Cake with Caramel Yoghurt Drizzle

This is a quick, yummy cake I came up with one day to surprise my kids after school, which, for the record, is something I NEVER do. 😉 It feels a bit fancy with the drizzle, but it’s actually super-simple, 100% whole grain and refined sugar-free. That’s a win-win around these parts.

After School Applesauce Cake with Caramel Yoghurt Drizzle
For the Cake
  1. 1 c unsweetened applesauce
  2. 1/2 c plain yoghurt
  3. 1 egg
  4. 1/2 c maple syrup
  5. 1.5 tsp pumpkin pie spice*
  6. 1 tsp cinnamon
  7. 1 tsp baking powder
  8. 1 tsp baking soda
  9. 1/4 tsp sea salt
  10. 1 c spelt or whole wheat flour
  11. 3/4 c slow cook rolled oats (large flake)
  12. 1/4 c ground flax (also called “flaxmeal”
  13. 1 apple, peeled and diced
  14. *if you don’t have commercial pumpkin pie spice, make your own using the recipe on the blog
  1. 1/2 c plain yoghurt (*you can use plain greek, but it will be quite thick, and less of a “drizzle”)
  2. 3 tsp maple syrup
  3. 1 tsp vanilla
  4. 1/2 tsp unsulphured molasses
  5. 1/2 tsp cinnamon
  1. In a large bowl, whisk together applesauce, yoghurt, egg, maple syrup, pumpkin pie spice, cinnamon, baking powder, baking soda & salt until smooth. Add spelt, oats, flax & apple and combine well.
  2. Pour batter in a greased 8”x8” pan and bake at 350F for 40-45 minutes, or until toothpick inserted in centre comes out clean.
  3. In the meantime, in a smaller bowl, whisk together drizzle ingredients: yoghurt, maple syrup, vanilla, molasses & cinnamon until smooth.
  4. Serves 9. Top each slice with a generous drizzle of sauce.
