Chews Me! Bars

These nut, dairy, gluten and refined sugar-free* bars whip up in a jiff and freeze well. Perfect for the lunchbox! (*Leave out the chocolate chips to avoid added sugar)

Chews Me! Bars
  1. 3 c slow cook (large flake) oats (use certified gluten-free if you have an allergy)
  2. 1.5 c puffed quinoa or brown rice cereal (try bulk store or natural food section)
  3. 1/2 c unsweetened shredded coconut
  4. 1/2 c raw pumpkin or sunflower seeds
  5. 1/2 c dark chocolate chips *optional
  6. 1.5 tsp cinnamon
  7. 1 c unsweetened sunflower seed butter (can also use a nut butter but won't be school-safe!)
  8. 2/3 c maple syrup
  9. 1/2 c unsweetened applesauce
  10. 1 tsp natural vanilla extract
  1. In a large bowl, stir together oats, puffed quinoa, coconut, seeds, chocolate chips and cinnamon.
  2. In a medium pot over medium heat, whisk together sunflower seed butter, maple syrup, applesauce and vanilla until smooth (don't boil!) Remove from heat and let cool slightly.
  3. Combine wet ingredients with dry then press mixture evenly into a parchment-covered 9x11" baking dish.
  4. Bake at 350F for 15 minutes.
  5. Remove from oven, press top of bars again gently & evenly.
  6. Let cool completely before removing from pan. Can place pan in fridge for 30 minutes or more.
  7. Cut into 20 bars. Can be frozen.
