Pumped Up Pasta

Today’s packed lunch — Pasta and (Pumped Up) Sauce: Whole grain pasta with a store-bought jarred, sugar-free marinara that I added some chopped spinach & fresh basil to when heating up, then topped with a little feta.

Soup & “Surprise” Wraps

Soup & “Surprise” (aka “completely random”) Wrap — Italian Barley & Parmesan Crouton Soup and a wrap made with a small whole grain tortilla, local nitrite-free sausage (leftover), grated carrot, cabbage, spinach and some tahini parsley sauce. A peach, some raw veggies, and one of the Honey & Date Sweetened Oatmeal Muffins I made yesterday round it out.

harvest (crockpot) applesauce

We have literally eaten the entire batch of crockpot applesauce I made yesterday at one meal. It’s THAT GOOD. We had a couple extra kids here for a sleepover but still, that’s saying something….It’s dead easy, and a great way to use up all of those fall apples!

Dip, Dip, and Double Dip!

This balanced lunchbox features: Yummus Hummus & Tasty Tzatziki (from my cookbook, Real Food for Real Families at pp.90 & 97, both a source of healthy protein & fat ), bell pepper, carrot and celery sticks, broccoli and Pita Party Chips (cookbook: p. 109) for dipping (complex carbs), and Garbanzo Gobble, a simple, yummy roasted chickpea snack (more protein & fibre, p.111 cookbook).
